Ragù a modo mio

Io il ragù lo faccio così;
il bello della mia cucina è che non ha dosi, faccio molto ad occhio e a “taste”. Innanzitutto per preparare il mio ragù, necessitate di un po’ di carne macinata, si insomma quanto credete possa bastare per il numero degli ospiti che avete. Ma stiamo andando già oltre, iniziamo dal soffritto: tritate a pezzettini cipolla, carote, sedano. Buttate tutto in una pentola dove avete preparato ciò che i maestri definiscono “l’onto” (unto) ossia un mix fra olio e burro, dosi.. quanto basta.
A questo punto unite l’onto con il soffritto e fate rosolare per un po’ (linguaggio tecnico è “masnare“). Quando vi pare possa bastare e la cucina è innondata di un profumo satura naso, aggiungete all’ onto opportunamente masnato, la carne tritata e una salsiccia spezzettata grezzamente. Un po’ di pepe.
Il tutto lasciatelo rosolare per una decina di minuti allorchè aggiungete al calderone un bicchiere di vino rosso (io uso il “Raboso“, anche il Brandy non è male). Lasciate evaporare.
Il tempo passa ed è l’ora di aggiungere il pomodoro. Disolito io metto una parte di passata di pomodori(Calipsa come marca è il top) e l’altra parte di pomodori freschi (da frigo)tagliati a pezzetti. Sale e girare ogni tanto.
Fuoco lento per un’oretta e, ecco preparato il mio ragù!!
Allora che ne dite, ho passato la prova del cuoco?

io insaporisco il tutto con una po di concentrato di pomodoro, quello nel tubetto soprattutto se la passata non è molto saporita

pure io un po’ di concentrato….e cottura a fuoco lentissimo nella pentola di coccio per almeno tre ore…..

@Bibi: la pentola di coccio. Allora qua ti dico una cosa che mi ha fatto fare il mio nonnino, che adesso non c’è più. Ho comperato una pentola di coccio molti anni fa e non so se è la tradizione napoletana ma, prima di usarla me l’ha fatta tutta strofinare con aglio e lasciarla in ammollo in acqua per 24 ore, questo è il procedimento da seguire solo per la prima volta d’utilizzo. Si fa così?
Va bhè, sai cos’è, il fatto che il coccio lascia al sugo un suo aroma particolare. Comunque mi hai fatto venir voglia di riusarla. Devo vedere se ritrovo lo spargi fiamma.

la pentola di coccio ognuno ha il suo modo…mia nonna me l’ha fatta tenere in ammollo 24 ore in acqua e aceto prima di usarla. e sì…lascia un aroma del tutto particolare..usala usala
